Mixo-logic’s Paul Lambert will be giving Cocktail Demonstrations in the Chef’s Theatre at Taste of Dublin 2009 in association with SABA. He will also be making cocktails in the SABA BAR at TASTE OF DUBLIN 2009. Come along and check it out!!!

Mixo-logic’s Paul Lambert was on tour last week showing bartenders all over Ireland how to make perfect Bacardi Mojitos.

The tour took him to Galway,Limerick,Cork,Wexford,Waterford,Mullingar and Tullamore teaching over 150 bartenders along the way.

BACARDI LEGACY COCKTAIL COMPETITION

Congratulations to John Paul Keating from SABA, who was chosen as Ireland’s representative in the Bacardi Legacy Cocktail Competition in London on Feb 4th. John Paul who’s recipe consists of Bacardi Superior, St Germain Eldeflower liquer,cherry tomatoes,lemon juice and pomegranate syrup will be up against the best in the UK out of which 3 will be chosen to fly to Peurto Rico. Results will be posted here when we get them.

ARIEL EXEL GEL EVENT

On Jan 15th, Mixo-logic’s Paul Lambert provided the cocktails at the launch of Ariel’s new Excel Gel which can be used and 15 degrees C. The whole theme of the launch was based around the number fifteen and hot and cold. With 15 different areas for the guests to entertain themselves in ranging from Nintendo Wii stations to make up stations,slush puppie stations to hot chocolate fountains, to the cocktail bar.

Paul made Cosmopolitans and Hot Rum Toddies on the night both of which went down really well. Especially the Rum toddy, being a crisp cold night outside, guests were warmed up by this delicious beverage.

Mixo-logic’s Paul Lambert was interviewed by Tom Dunne on Newstalk Radio this morning. Paul discussed some Christmas drinks that people could try over the festive period. The recipes for which are below:-

APPLE TODDY

50MLS CALVADOS

2 TEASPOONS OF HONEY

BOILING WATER

1 BAKED APPLE

METHOD:- Heat a glass with a little boiling water. Discard then add the calvados and honey. Top with about 100mls boiling water and stir until the honey is dissolved. Cut a wedge of baked apple, dust with grated nutmeg and drop into the drink. Serve with a napkin

HOT SPICED BUTTERED RUM

50MLS DARK RUM

1 TSP SPICED BUTTER

BOILING WATER

METHOD:-heat a glass with boiling water. discard. Add the rum and butter to the heated glass. Top with about 100mls boiling water. Add a little sugar to your taste(1-2teaspoons) Stir until ingredients dissolve. Serve with a napkin and perhaps a little dark chocolate,yum!

MULLED WINE

Many recipes for mulled wine differ but the basic contents are as follows. You need red wine(about 2/3btls,brandy,port,grand marnier/cointreau, chopped citrus fruits i.e. lemons,limes,oranges, cloves,cinnamon sticks,chopped apple,7up. Basically put the wine in a big saucepan on a low heat. Add the brandy port and orange liquer to your own taste, throw in some cloves and cinnamon. Add the fruit and cook on a low heat until nice and warm. Be careful not to use too high a heat. Then my advice is to leave it overnight to allow the flavours to develop. heat again when serving, add a little 7up for sweetness and serve with a napkin.

Mixo-logic’s Paul Lambert attended a seminar in Belfast hosted by Gary Reagan and David Wondrich.

Gary spoke about drinks that shouldnt be made but actually taste good!!!

David spoke about historical drinks like the Artillery punch, Clover Club, Improved Whiskey Cocktail.

It wa a great night attended by bartenders from North and South and by guys from the UK too.
